Grilled marinated calamari

Squid:



The word for squid in Italian is calamari (plural) which has all but replaced the use of squid in culinary recipes in English. Actually in English, calamari is used primarily to refer to the rings cut from the tube of the squid. The rings are frequently breaded and fried.


The Napoli connection:


While I was in Napoli this past summer (2009), I leaned how to prepare freshly caught squid (and octopus) and marinate it to make the texture less rubbery and the taste very zesty. I have picked up several recipes over the years, but by far and away, my favorite is the grilled marinated calamari presented here. I strongly suggest that you not make the recipe below unless you can get fresh squid. Younger squid tends to have less of a rubbery texture than larger older squid. However, I like the rubbery texture and enjoy both young and fully grown squid. Most parts of squid are edible but you will typically find it sold fresh with the tube, flaps, and the tentacles prepared. If you do buy it whole, simply remove the head, gut (make sure you remove the quill – these are transparent cartilage inside), and remove the skin and flaps. You will be left with the tube which needs to be washed thoroughly. Cut the tentacles away from the head and wash them along with the flaps.


Squid


Ingredients (serves 5):


    * 1 ½ pounds – cleaned and prepared squid (tentacles, tube, and flaps)
    * ½ cup – extra virgin olive oil
    * 6 tablespoons – lemon juice
    * 2 tablespoons – fresh oregano leaves, chopped
    * 1 tablespoon – fresh basil, chopped
    * 12 cloves – garlic, minced
    * 2 tablespoon – pepper
    * 1 tablespoon – salt
    * 1 ½ teaspoons – red pepper flakes
    * Lemon wedges


Preparation:


Cut the tubes of the squid so they open and lie flat and add them along with the tentacles and flaps to a Ziploc freezer bag along with the olive oil, lemon juice, oregano, basil, garlic, pepper, salt, and red pepper flakes. Seal the bag, shake to coat well, and marinate for 24 hours.

Once the squid has marinated, set the grill to high heat. Grill the squid until they are just cooked through (opaque) turning once (about 2 to 3 minutes). Remove from the grill and cut the squid if desired. Serve with lemon wedges as an appetizer. Enjoy!

Napolitano Cannelloni: Italian dish

Napolitano Cannelloni is a spectacular dish with a deep rich tomato sauce over thin noodles stuffed with cheeses, egg, and prosciutto. I will discuss making noodle dough, mozzarella, and prosciutto in other articles, but even with store-bought ingredients, the dish will be a sensation. One of the ingredients, prosciutto, literally means ham in Italian. But in English, it refers to the cured, dried, and spiced ham found in most supermarket delis which the Italians refer to as prosciutto crudo meaning raw.


Ingredients (serves 6):



    * 12 oz ricotta cheese
    * 2 large eggs
    * 8 oz mozzarella cheese (fresh!) cubed
    * 4 oz prosciutto, chopped
    * 4 oz parmesan cheese grated Ragù finto tomato meat sauce – make what is called for in the recipe.
    * Egg pasta – if you make it yourself, you should make 14 - 4" x 6" rectangles of thin dough. See my homemade pasta. If you use my recipe make sure you make the dough thinner than suggested in the recipe (one notch). You can also buy the manicotti shells found in most supermarkets. Fresh dough is out of this world, and I always recommend it.
    * Fresh basil

In a large bowl mix the eggs and ricotta cheese until it is creamy. Add the mozzarella, prosciutto, parmesan, and one tablespoon Ragù finto sauce then mix.

Pasta and Cannelloni


Preheat the oven to 350 degrees F. The pasta should be cooked in salted water al dente. Once the rectangular pasta has cooked (rinse with water to cool), place on a clean cloth. Disperse the cheese mixture evenly among the 14 pasta rectangles and roll each up (leave the ends open). I use a 10" x 14" glass baking dish and spread generous amounts of the tomato sauce on the bottom before I lay the pasta in the dish. The cannelloni should be in one layer. Use the rest of the tomato sauce on top of the cannelloni along with some grated parmesan cheese if you choose. Cover and bake for 15 minutes and then uncover and continue to bake for an additional 15 minutes or until the sauce is browned. Garnish with basil and serve.

EASY ITALIAN PESTO SAUCE RECIPE

Let's learn how to make pesto sauce.

This is another very easy and delicious recipe that can be served over your favorite pasta, grilled chicken, mussels or as a topping for pizza. For those of you who want your basil pesto sauce without pine nuts, you can leave them out or substitute the pine nuts with walnuts. For a nice variation on this recipe, try adding sundried tomatoes to the pesto mixture before blending for a delicious tomato pesto sauce. This recipe should only be used as a guide. Not everyone has the same preferences. Some do not like a lot of garlic or olive oil flavor for example, so it is recommended that you experiment until you find the right recipe.

Pesto Sauce Ingredients:

4 cups fresh basil leaves

3/4 cup chopped walnuts or pine nuts (the nuts can be lightly toasted in a dry pan before blending for added flavor)

2 cloves garlic, peeled and chopped (more or less depending on your taste)

1/2 cup of grated Parmesan cheese

1/2 cup of extra virgin olive oil

salt and pepper to taste

Directions:

Add all ingredients to a food processor or blender except olive oil. Add a little oil at a time and process until sauce reaches desired consistency. Ready to serve in your favorite dish.
